Maji ya uvugu vugu( ya kukandia ) Kwenye bakuli tia maji ya uvugu vugu nusu kikombe ,tia hamira funika kwa dakika 3 hadi 5, kisha tia sukari koroga vizuri na uanze kutia unga wa ngano na iliki kidogo kidogo huku unachanganya
Tia tui ,anza kukanda unga engeza maji yakihitajika mpaka donge lishikane vizuri ,kanda kwa dakika 15 mpaka 20 au mpaka liwe laini na halinati kwenye vidole vyako. Ugawe madonge 3 au 4 sawa sawa yafanye duara
Sehem utakayokatia mandazi weka/nyunyiza unga kidogo chukua donge moja moja lisukume kutumia kifimbo cha chapati lakini lisiwe jembamba sana wala nene sana , kulingana na ukubwa unaopenda Tumia kisu kata mara 2 kupata pisi 4

Ukimaliza yote yaweke pembeni sehem yenye joto yaumuke / yafure mara mbili yake Teleka mafuta kwenye karai yakipata moto tia maandazi ,yakiwiva upande mmoja geuza upande wa pili mpaka yaiwive na yapige rangi ya brown yatoe ,yapo tayari kuliwa kwa chai au mchuzi.

Plain flour half kg
Yeast 1 tbsp Sugar 3 to 5 tbsp
Cardamom powder 1 tbsp
Coconut cream 5 tbsp
Cooking oil 1 littre
Warm water for kneading
In a bowl put 1/2 of warm water add yeast ,cover for 3 to 5 mins ,then add sugar mix well together, start adding flour and cardamom powder, mix well add coconut milk and more water if required, knead for 15 to 20 mins or until smooth and it doesn’t stick to your fingers
Divide in to 3 to 4 small doughs (equal size)and make them a perfect round
Dust a flour on your work surface,using a rolling pin ,roll each round to make a good size depend on the size you want ,use a knife to cut in to 4 quarters ( see pic no 1) let them rise
In a pan heat the oil on a medium heat, when the oil is hot add your mandazi and start fryng one side until done flip the other side until golden brown remove them ,serve with tea or curry.
